Payten & Jones is a modern and edgy winery located in the heart of Healesville. Established around 2006 by childhood mates Behn Payten and Troy Jones, the venture was joined early on by Behn’s father, Peter Payten. Peter is a true veteran of Australian viticulture and a pioneer in organic vineyard management, bringing decades of experience to their unique operation.
About Payten & Jones
The team adopts a strict minimal intervention approach across both the vineyard and the winery. This involves hand picking fruit, using natural or native yeasts, and avoiding fining or filtration where possible. With modest oak use and a commitment to sustainable farming, their wines are deliberately unpolished in the conventional sense. You can expect plenty of texture and a raw, edgy character that truly represents the fruit.
Their diverse portfolio includes Pinot Noir, Chardonnay, Sangiovese, and Syrah. They offer several different ranges, such as the approachable Valley Vignerons series for everyday drinking alongside more contemplative and experimental releases. The cellar door itself is a relaxed and vibrant space that feels more like a street art gallery and wine bar than a traditional tasting room. With food trucks on the weekends and a focus on community, the atmosphere prioritises character and flavour over prestige.
